Describe the feature you'd like, and why

oh boy, people have opinions on matrix. We don't love matrix ourselves, so maybe it's time to look at supporting one of the following:

xmpp
deltachat
zulip
jami

Additional context

We should absolutely research if any of these already have a good helm chart and start with that. I think xmpp is probably the most mature in this regard.
